In the spirit of wedding prep (t-3.5 months!), I’ve been trying to find the perfect combination of diet, exercise, and skincare so that my best self is the one walking down the aisle. So when OrganicGirl challenged me to eat leafy greens in two meals a day for one week and see the results, I had to try! I already have a spinach loaded breakfast smoothie daily (see recipe below) so upping my greens intake seemed like no big deal.

I’m highly aware of the fact that “you are what you eat” when it comes to the affects food has on our bodies. I know that when I eat better, I feel better and when I feel better, I can train harder, think clearer, etc. So as expected when I committed to eating my greens I noticed a change in my skin. Not only did a couple trouble spots clear up but my skin was looking smoother and more radiant.

Where my morning smoothie helps keep my skin issues in check, varying up my greens from simply spinach was the extra boost my skin needed. The OrganicGirl salad mixes have everything from baby kale, green chard, bok choy, sweet pea shoots, mustard greens and much much more. While I like sticking to spinach in my smoothies, the sweet pea salad blend is my favorite salad base and the supergreens was the best for cooking (Try adding it to your next pasta dish for an instant veggie-boost).

Breakfast Smoothie
2 large handfuls of spinach
1/2 cup blueberries (fresh or frozen)
1/2 cup strawberries (fresh or frozen)
1 cup milk (I use almond milk or coconut water)
1 banana
optional: 1/4 cup oats and 1 tbsp chia seeds

-Add all ingredients into a blender and blend away!
-I like adding oats and chia seeds to my smoothies to keep me full until all morning long.
-If you use a small blender like me, try blending liquid, greens, and banana first then adding your berries. This helps everything blend up nicely without any lumps.
