Recipes I’ve Tried During Quarantine II

Some more new recipes that I tested out over the past couple of weeks. You can read the first installment of Quarantine Cooking with Ana Luiza here. I don’t have pictures for most of them though because I’m generally too busy eating to remember to snap a picture. Also please excuse my subpar food photography. Let’s go!

Spinach & Mushroom Calzones

These were only alright. It was more user error than the actual recipe. I think I just needed more sauce and more salt. I didn’t have any vegan cheese on hand and only had a small jar of sauce so it ended up being a lot of bread and a lot of spinach.

Vegan Margherita Pizza

This is the same dough as the calzones and it was delish! The trick is to heat up a pizza stone or cast-iron skillet for a LONG time before actually cooking your dough. This recipe makes enough for 6 small personal pizzas or two large ones. I”ll be using this recipe again in the future.

Vegan Caesar Salad

Since we went totally 100% plant-based, there are a number of things that I’ve missed eating. Caesar salad is one of the big ones (anything cheese-related is the main one). This turned out really well. I had a pretty low bar set but this recipe was easy to make with what I had on-hand. I should have taken time to make croutons though because just the lettuce was pretty plain.

The Best Stir Fry Sauce

I’ve been on a year-long quest to find a stir fry sauce that I can make quickly and easily at home. This is THE one. I (almost) always have the ingredients on hand and I can always get it nice and saucy. Other sauces can be really hit or miss for me, user error.

Fluffy Vegan Waffles

I wanted to prep some fun breakfast food a couple of weekends ago, so I decided to make these waffles. They turned out really good but I didn’t read how many servings it made so I ended up with these gigantic stacks of waffles. I ended up freezing about half of them and they’ve taken to the freezer well. It’s been nice having them for quick breakfast or snacks all week long. I just pop them in the toaster oven for a minute or two and they are good as new.

Chocolate Mug Cake

This has been the little treat that I’ve been making once or twice a week since late March. It’s quick, easy, and hits my need for something chocolatey at night. I like to add an extra tbsp of sugar since I don’t have any chocolate chips to add to mine.
